MIXED BERRY JAM

Oh how I love jam, especially homemade. This recipe and adds such a beautiful sweet element to any cheese plate. Making jam can be intimidating, especially if you’re canning and storing your jam for months to years on end. That requires sterilizing your jars and taking a few extra steps. We’re keeping it easy today, making some simple refrigerator jam. You heard that right, jam that lives in your fridge! Because we aren’t sterilizing the jars for long-term storage, we don’t want to risk bacteria growing in room temperature over a long period of time. By placing your jam in the fridge, you ensure freshness for up to 3 weeks!

I bought a huge container of mixed berries from the grocery store and realized I wouldn’t be able to eat all of them before their expiration date. By boiling them down I was able to extend the shelf life with this yummy mixed berry jam! Pair it with a creamy brie, on a fresh baguette or even with a sharp, nutty gruyere. Recipe below.

 

Mixed berry jam

SUPPLIES + INSTRUCTIONS

  • 2 cups of blueberries ⁣

  • 1 cup of raspberries 

  • 1 cup of blackberries

  • 1 cup of strawberries⁣

  • 1 cup of granulated sugar⁣

  • Juice of 1 lemon ⁣

    TO MAKE

  • Combine berries and sugar in a medium bowl, mix to coat all berries in sugar and let sit for 15 mins⁣

  • Transfer berries into a medium sauce pan and cook on medium-high heat. Keep stirring occasionally until the mixture comes to a boil, about 8 minutes. ⁣

  • As the berries begin to boil, use the back of your spoon or spatula to break down the blueberries and strawberries a bit more. The raspberries and blackberries should break down after a few minutes on their own.⁣

  • Mix in lemon juice and let simmer until the liquid becomes a gel-like consistency, about 20 minutes.⁣

  • Transfer to a mason jar, cover and let fully cool in the fridge. ⁣
