That "Cabot Lunch" Plate

Lunch is probably my favorite meal of the day. Sandwiches, condiments, chips and beyond, it’s the perfect time to take a break from the work day and treat yourself. As an avid cheese lover, there are endless options to add to your sandwiches. So much so, that it’s worth just making a plate dedicated entirely to cheese. I teamed up with Cabot to highlight some delicious cheeses on a deconstructed sandwich plate. Cabot makes award-winning cheddars in a variety of ages and flavors. On this plate, I used three of Cabot’s Deli Bars: Seriously Sharp, Spicy Jack and Cracked Peppercorn. Cabot has a huge selection of flavored cheddars, which provides countless opportunities to pair flavors and complexities. I wanted to use three cheeses that I personally enjoy on sandwiches. 

Seriously Sharp is a classic sharp cheddar. Aged 18 months, this cheddar has a nice bite that can stand up against savory and strong accoutrements.  On this plate, I would recommend pairing with salami calabrese, cornichons and grainy mustard. These tangy and salty combinations will blend nicely with the sharpness of the cheese. 

For a bit of a kick, I added Spicy Jack to the plate. This cheddar is made with mild and medium jalapenos, making for a smooth and flavorful experience. The spicy fusion of green and red jalapenos pair beautifully with sweeter accoutrements to cut the heat. On this plate, I would recommend pairing Spicy Jack with Prosciutto, honey mustard and cucumbers for a refreshing crunch. 

I love adding salt and pepper to my sandwiches, so I had to include the Cracked Peppercorn Cheddar on my cheese plate! This sharp cheddar is seasoned with an earthy kick of pink, black, green and white peppercorns. On this plate, I’d recommend pairing it with salami calabrese, tomatoes and potato chips. This combination is the perfect blend of salt and pepper, with a spicy kick of salami and juicy texture of the tomatoes rounding out the experience.
